Let’s Have Big Fun on the Bayou! #3

How do you spend your weekends? Cooking for the week ahead? Cleaning? Shopping? What if I told you you could make a healthy dish that will take a little prep time, but you can spend time with your family while it’s cooking. Let’s talk, Jambalaya, Y’all! I grew up on the outskirts of New Orleans and we didn’t actually eat a whole lot of jambalaya when I was a kid. I actually learned to eat it as an adult. The jambalaya on the West Bank of New Orleans, is dark in color and full of flavor. The jambalaya west of New Orleans, in Lafayette is made with tomatoes for color and flavor. I combine the two to make a delicious jambalaya that’s all my own.   First I chop some smoked sausage and cube some chicken breasts. Then I brown those together
