While my education is in design, my true passion is food and family.   Let’s dive right in. I am a New Orleans girl living in Texas. I grew up eating and learning how to cook Louisiana food. I have come to love Tex-Mex. I think I give it my own flair. Wether it’s Tuesday or any day actually, Taco nights are a must for busy Moms. I start with a pound of lean ground beef, like sirloin, but you could use ground chicken or turkey also. I find the ground chuck is too fatty and makes the meat too greasy. Into a Cast Iron Skillet goes the ground meat, spices, flour and butter. Keep stirring and scraping the bottom of the pan as the flower will stick. When it’s brown, add water and stir. Meat is done. It’s really easy and you won’t believe you ever opened a packet.   I usually serve tacos with Spanish rice or a small salad. I hope y’all enjoy. POV! My daughter doesn’t like spicy food. You can bump up the spice if your family can take it. I usually make her plate with taco meat, cheese, rice and tomatoes and avocados. This way I don’t have to make separate dinners.   Taco Seasoning   1 TBS Chili Powder 1 TBS Flour 1 TBS Granulated Garlic 1 TBS Granulated Onion 1 tsp Smoked Paprika 1 tsp Oregano 1/2 tsp Salt 1/4 tsp Pepper 1/2 tsp Sugar
